Nut marmalade Roll Cake

 This roll cake is very easy to make and it's wonderful!
You can make the cake without nuts if you are allergic or don't love nuts. For the cream filling I used  apricot marmalade that my mother made! Delicious! You can use whatever you like but using any kind of marmalade it's fast and yummy!
For kids you can make nut free sponge  only vanilla taste and strawberry marmalade filling, they will love it!
OK, so for this roll cake you need:

  • 5 eggs
  • 100 gr of sugar
  • 1 tsp of vanilla
  • 3 tbsp of oil
  • 4 tbsp of water of milk if you prefer
  • 2 tsp of baking powder
  • 3 tbsp of grounded nuts, you can use almonds if you like
  • 2 tbsp of flour 
  • or you can use 5 tbsp of flour if you want to make it nut free)
  • marmalade for filling
Preheat the oven to the 390 degrees.
Beat the eggs and sugar to make a foam. Add oil, water (milk), vanilla, flour, nuts and baking powder.
Prepare baking pan and line it with baking paper. Pour the batter into the pan and bake for a 15 min!
Soon as you peel of the baking paper from the sponge, put the sponge on the kitchen rag and roll while it's hot! And leave it to cool down.

Roll out the sponge carefully and spread out the marmalade, roll in again. You can decorate or leave like that.

German cake Kommissbrot!

This cake is very common for my country, for coffee and tea, or for a breakfast. It's simple and in a same way delicious. It's that kind of cake that can be good for a long time. My sister loves when it's toasted and I have to admit, I like it too! The main ingredients for this German cake is egg white. So let's begin:

  • 4 egg whites
  • 1 cup of sugar
  • 1 cup of dried cranberries, raisins, chopped nuts, caramelized fruits etc
  • 1 cup of flour
  • 2 tsp of baking powder
  • 3.5 oz of oil
  • If you like lemon or orange zest
Preheat oven to a 440 degrees.
For this cake you will need a mold, for bundt cake, bread mold etc...
Beat the egg whites with sugar, until you make a stiff foam, then add oil, flour, baking powder, on the end add raisins, cranberries etc.
Place the batter into the mold and bake for a 35 min.

On the top you can put melted chocolate, powdered sugar...

Cupcakes with white chocolate frosting πŸ’™

 You can't be wrong with cupcakes πŸ’™ Everybody loves them! Today I m sharing recipe for cupcakes with white chocolate frosting and cacao base. Very decorative and tasty! From these ingredients you can make dozen cupcakes!

 Ingredients:

  • 150 gr of flour
  • 3 eggs
  • 150 gr of sugar
  • 1 tsp baking powder
  • 75 ml of oil
  • 75 ml of milk
  • 2 tbsp of cacao 
For frosting:
  • 150 gr of butter
  • 150 gr of powder sugar
  • 115 gr of melted white chocolate
Preheat oven to 360 degrees. Put the butter on the room temperature.
Prepare muffin pan, coat it with oil to prevent sticking or use non stick spray. Or as I use baking cups.
In one bowl mix all dry ingredients, flour, sugar, baking powder, cacao. In another bowl beat the eggs, add slowly oil into the eggs. 
Then add dry ingredients slowly mixing. On the end add milk and mix it to combine batter.



With ice cream scoop place the batter in muffin pan. Bake maximum 15 min! Do not over baked them. They will be dry. It's OK for them to be little soft on the top when you pull them from the oven.

Leave them on cooling rack.

With mixer prepare butter and powder sugar together, melt the white chocolate, pour  it slowly into the butter-sugar mixture and mix it nicely. Leave it in the fridge for 15-20 min.

Put the frosting into the piping bag or if you don't have it, you can put it into the zip lock bag and cut of one end of the bag. Pipe it as desire onto the base.
You can decorate them with any.

Marble Bundt Cake

This cake is my husband favorite for now 😊 

Not to sweet and heavenly moist πŸ‘Œ Very easy to make and it's quite decorative. And on the top you can decorate it as you like! I decorate mine with a white chocolate, dried cranberries and lemon zest.
You  need a bundt mold for this one. Ok, here are ingredients for this beauty! 

Ingredients:
  • 2 1/2 cup of flour
  • 3 tsp of baking powder
  • 1 tsp of baking soda
  • little sprinkle of salt
  • 2 eggs
  • 1 cup of brown sugar
  • 1/3 cup of oil
  • 2 1/2 cup of milk
  • 1/2 cup of Greek yogurt 
  • 2 tbsp of cacao powder    

 Preheat oven to a 420 degrees.

Mix together flour, baking powder, baking soda and salt. In small bowl mix sugar and eggs, beat it with mixer until there is smooth mixture. Add oil, yogurt and milk inside. Slowly add mixture of flour stirring it nicely with a whisk.
Separate batter in two equal part, in one put cacao and stir it well to combine.
Coat  cake mold with oil to prevent from sticking.
Pour some of batter with out cacao, then pour some batter with cacao, and continue to do like this until you run off batter.
With a wooden skewer or with a fork, deep it into the batter and make circles from bottom to top of the mold. Do it all around the mold. You are making a marble pattern with this movement.
When you are done, place the mold with batter into the oven.
Bake it between 45-60 min. You will know that cake is done if you place the skewer into the cake if there is no batter when you pull it out, the cake is done!

Lavender lemon cookies!

 I have to say these lavender lemon cookies are my favorite one! Love the lemon scent and then lavender comes to scene! Something very special is with these cookies. You have to try it! Sweet and lovely crackling with cup of tea! Heaven 😊 Don't be suspicious..just try it, and after you can judge if you want πŸ’œ This recipe is for about 16-20 cookies, depends from shape of the cookie cutter.

Ingredients:

  • 1 cup of flour
  • 1/4 tsp of salt
  • 1/3 cup of brown sugar
  • 1 1/2 tsp of dried lavender
  • 2 tsp of lemon zest
  • 1/2 cup softened butter
  • 1/2 tsp rum
  • sugar for sprinkling 
Mix dry ingredients. Mix lavender, sugar and lemon zest, grind with the mortar. Mix all ingredients together with hands. Roll the dough between two baking paper sheets, roll it about 1/4 inch thickness. Leave in the freezer for a 10 min.

Preheat the oven on 350 degrees.
Draw the rolled dough from the freezer, pull the top paper sheet and put it on the baking pan.
 Use the cookie cutter that you like and start making the cookies. From left over dough, make a roll dough again and make more cookies. 
Sprinkle little bit of sugar on the cookies top.

Bake 10 min, do not over baked them! They are done when there is a little bit of golden around edges.

Ricotta bread without yeast!

Sometimes my family ask for quick and fresh bread from our oven. And I made one recipe that I use in that cases. Because the dough is with baking powder, we have fresh and delicious bread in one hour (kneading + baking)! When I don't have ricotta cheese in my fridge I use mayo and Greek yogurt! It sounds weird but trust me, you will be delighted with fresh bread in one hour making! So let's begin with the ingredients.
Ingredients:
  • 250 gr + 50 gr (2  + 1/4 cups) of flour
  • 1 egg + 1 egg
  • 4 tbs of ricotta cheese or if you don't have ricotta cheese you can do 2 tbs of mayo and 2 tbs of Greek yogurt. 
  • 50 ml (1.7 oz) of milk
  • 3 tsp of baking powder
  • 1.5 tsp of salt
Preheat oven to a 430 degrees.
Mix dry ingredients, 2 cups (250 gr) of flour first, you can add more flour after, if you  need to.  Then add ricotta, egg, milk into the flour.  Kneed well, until you make a lovely ball shape. The dough suppose to be soft and airy. Roll the dough into a circle 1 inch thick. Then roll the circle from one end to another, making a loaf.
Place the loaf into a baking pan with baking sheet.
Break down the egg with a fork, and coat the loaf with it.
If you want sprinkle course salt, sesame and flax seeds on the top of the loaf.
With kitchen scissors snap the top of the loaf  several times. 
Bake the bread 20-25 min! 

The brad is very nice the day after baking, or like a toast. Just keep him covered with the dome or in the air tight container.

Healthy no flour brownies with avocado

These little treats are life savers πŸ‘Ό One piece is enough for satisfying  cravings during the day. Very easy to make, to storage and can help when you need something sweet but yet not so bad. After lunch one of these loveys  with cup of coffee and you are set.



Ingredients:

  • 1/2 cup of almond flour
  • 1/2 cup of cacao powder
  • 1 avocado mashed
  • 1 banana mashed 
  • 2 eggs
  • 1/3 tsp of baking soda
  • little bit of brown sugar if you find not enough sweet from banana 
I made a avocado frosting, but you can sprinkle cacao powder of icing sugar on the top.


 Avocado frosting:

  • 1 avocado mashed 
  • 1/4 cup cacao powder
  • 1/4 cup of Greek yogurt
  • 1/3 cup of honey
Preheat oven to a 350 degrees.
You need 8x8 inch baking pan, line it with baking paper.
Mix together avocado, banana, eggs. Mix it well. Add flour, cacao, baking soda pour it in the pan and bake for a 20-25 min.

For Frosting, mix honey, avocado, Greek yogurt and add cacao powder mix it well. Leave it the fridge.
After the brownies are cooled, cover them with  Avocado frosting.
Divide  into 12 pieces. You can store them up to 1 week in the fridge.

Blueberry cake with Greek lemon yogurt frosting

I had some blueberries in my fridge and I decided to make something sweet with them. Cake for breakfast or in the afternoon with cup of tea, coffee and maybe glass of milk for youngest one. My little boy adore blueberries! He love this cake as his father πŸ˜‰ Anyway, here is the recipe for lovely Blueberry cake:

  • 2 cups of flour
  • 1 cup of milk
  • 2 eggs
  • 4 tbsp butter or 1/4 cup of oil
  • 1/2 cup of  brown sugar
  • 1 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1 tsp of ground nutmeg
  • 3/4 tsp of salt
  • 1 tsp of vanilla 
  • 1 cup of blueberries
Strudel topping:
  • 1/2 cup of ground nuts
  • 1/3 cup of brown sugar
  • mix it together, set a side
Frosting: 
  • 1 cup of Greek yogurt
  • 1 cup of confectionares sugar
  • 1 tsp of lemon zest or if you like it can be orange zest, lime zest..
Blueberries are optional, you can make a cake without them and add them when serving the cake. Lemon Greek yogurt is optional too, but I like the blend of the cake and freshness from the frosting!

Preheat the oven on 425 degrees.
In mixing bowl add flour, sugar, baking powder, baking soda, nutmeg, salt. At the end add milk, eggs, butter or oil, vanilla. If you are putting the blueberries in the batter then add them on the end when you mix well other ingredients.

I use the medium cheesecake pan with spring form. Oil the pan on the bottom and on the side all the way up. Sprinkle with flour all around to make nonstick coat.

Pour the batter into the pan and sprinkle it with strudel topping. Bake the cake for 45 min. You will see when the cake is done. The cake  edges will separate from the sides of pan and the cake will rise and be golden. You can use the long toothpick, wooden skewers  to see is it done, when you pike the cake you can see if there is unbaked batter on the skewers. If there is batter then you need to bake the cake more. 

The cake needs to be completely cool.

Mix together 1 cup of Greek yogurt, 1 cup of confectionares sugar and lemon zest. Mix it with a spoon not with mixer. The frosting need to be in the fridge.

When you serve the cake, pour the Greek lemon yogurt frosting on the top of the piece. You can sprinkle with lime zest and add more blueberries on the top for nicer appear.

Irish Soda Bread! Inspired by Harry Potter

I need to confess..... I'm Harry Potter fan! πŸ’• I know, I m adult and a mother of a little boy πŸ‘€πŸ˜Š That is my secret πŸ™ˆ No need to say that books are wonderful, movies are very good and that I think  Harry Potter is not only for children. So in the story, mother of Harry's friend Ron is an excellent cook! And her Soda Bread is famous! I tried to make recipe that I found in the Unofficial Harry Potter Cookbook. It was very delicious but I altered with some of mine ingredients to be even better!

Ingredients:
  • 4 cups of flour
  • 1 1/2 tsp of baking soda
  • 2 tsp of salt
  • 2 tsp sugar or honey
  • 4 tbsp of butter
  • 1 egg
  • 1 cup of milk + few drops of lemon juice
  • 1/2 cup of Greek yogurt
Preheat oven to 425.
Mix together flour, baking soda, salt and sugar or honey. In a microwave safe bowl pour 1 cup of milk with lemon juice and add 1/2 cup of Greek yogurt. Microwave it for 1 min. You will notice lumps in the milk from yogurt and lemon. That is what you need!
Add butter in the bowl with flour, and press it with fingers to resolve. Add egg and milk mixture. 
Now knead the dough and form it in the ball. Dust the baking pan or a pot with flour, lay the dough and dust it with flour. Make an X on the top. And it's ready to bake! 
Bake it 45 min on 425 degrees, and after that reduce the temperature on 300 a bake another 10 min! It will form a very thick and nice crust!

The bread is wonderful and can stand a long time and be good.  It is delicious if you toast it the days after baking for nice breakfast.
