Irish Soda Bread! Inspired by Harry Potter

I need to confess..... I'm Harry Potter fan! πŸ’• I know, I m adult and a mother of a little boy πŸ‘€πŸ˜Š That is my secret πŸ™ˆ No need to say that books are wonderful, movies are very good and that I think  Harry Potter is not only for children. So in the story, mother of Harry's friend Ron is an excellent cook! And her Soda Bread is famous! I tried to make recipe that I found in the Unofficial Harry Potter Cookbook. It was very delicious but I altered with some of mine ingredients to be even better!

Ingredients:
  • 4 cups of flour
  • 1 1/2 tsp of baking soda
  • 2 tsp of salt
  • 2 tsp sugar or honey
  • 4 tbsp of butter
  • 1 egg
  • 1 cup of milk + few drops of lemon juice
  • 1/2 cup of Greek yogurt
Preheat oven to 425.
Mix together flour, baking soda, salt and sugar or honey. In a microwave safe bowl pour 1 cup of milk with lemon juice and add 1/2 cup of Greek yogurt. Microwave it for 1 min. You will notice lumps in the milk from yogurt and lemon. That is what you need!
Add butter in the bowl with flour, and press it with fingers to resolve. Add egg and milk mixture. 
Now knead the dough and form it in the ball. Dust the baking pan or a pot with flour, lay the dough and dust it with flour. Make an X on the top. And it's ready to bake! 
Bake it 45 min on 425 degrees, and after that reduce the temperature on 300 a bake another 10 min! It will form a very thick and nice crust!

The bread is wonderful and can stand a long time and be good.  It is delicious if you toast it the days after baking for nice breakfast.
