Oats-almond flour berry cake!

Sometimes I just need something nice to eat with my morning cup of coffee, and to be my breakfast to. This cake is quite delicious and moist, I keep it in the fridge and it's nice cold for this hot weather! 


As always I m trying to eat healthier! So this cake were made with mixture of oats and almond flour, no oil, no butter... You can make it with any kind of berry or without! Here is the recipe:


Ingredients:

  • 1 cup of oats flour
  • 1/2 cup of almond flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 2 bananas
  • 1/3 cup of honey
  • 1/4 cup of greek yogurt
  • 1 cup of berries or more depends of your taste



Preheat the oven on 400F. Mix first dry ingredients, and in the other bowl mix wet one. Slowly add the dry ingredients in. Grease the baking pan ( I usually use medium cheesecake pan) pour the batter in and bake for about 40 min, more or less you will see when the edges will start to detach from the pan. And you can always try with toothpick is the cake done! You have to leave it to rest and get cold, about 30 min before you serving this beauty. 

If you have guests you can put some vanilla ice cream on the top for nicer look and taste!

Blueberry muffins!

Sometime we need to be little bit bad 😊 I love this recipe for blueberry muffins! So I have to share with you! They are very nice for breakfast and coffee, or as a dessert after lunch! 



Ingredients for 12 muffins:


  • 2 cups of flour
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 cup of oil
  • 1 cup of  sugar
  • 2 eggs
  • 1 cup of milk
  • 1 tsp of vanilla
  • 2 cups of blueberry
Preheat oven to a 450F. 
Mix oil, sugar, eggs, vanilla then add dry ingredients, after that add blueberry.

Place and divide batter into a muffin pan, almost to the top of the baking cups! They will rise very nice. Bake them for 5 min on 450F, then decrease the oven to a 370F and bake for another 12 min, you want a golden brown color! 
Leave them to cool it off and the are ready to eat! πŸ’—πŸ’—πŸ’—πŸ’—πŸ’—πŸ’—πŸ’—

Only 80 cal, no flour, no fat brownies!

After pregnancy I love to eat chocolate sweets πŸ’— And if you combined that and wishing to get in shape, you have to bake healthy and skinny treats 😊 Before I share this recipe I will warn you...the ingredients are little bit strange for brownies, but believe me they taste pretty good, you have to try it! NO flour , No fat!!! They are nice combo of healthy, skinny and indulge in πŸ’˜




So here are ingredients for 9 pieces:


  • 2 eggs
  • 1 cup of ground zucchini  ( don't be afraid, you will not even know that they are in!)
  • 1/2 cup of cocoa powder
  • 1/2 tsp of baking soda
  • 1 tbsp of honey
  • 1 banana
  • 1 tbsp of almond butter
  • 1/3 cup of chocolate chips
  • 1 tsp of vanilla 
Preheat oven to 350 F. Grind one medium zucchini in food processor and squeeze the water from it with hand. Mix all ingredients together in food processor. In 8x8" baking pan place the baking paper and pour the mixture in. Bake about 20 min, do not over bake it, then they will not be moisture! Left the brownies for 15 min to cool, and then cut it on 9 pieces.

And when you need something sweet and chocolaty, they are there without feeling you are doing something bad to your body πŸ‘πŸ’

Pineapple almond cake!


You can put any kind of fruit puree in this recipe, there is a beauty of this cake. Today I choose to put pineapple puree, you can do it with apple, pear, clementine, banana, mango, peach. Just blend the fruit and there is a puree πŸ˜‰

Ingredients: 


1/2 cup of pineapple puree + 4 slices of blanched pineapple 
2 eggs
4 tbsp of honey
1 cup of almond flour
1/2 tsp of baking soda + 1/2 tsp of baking powder
1 tsp of vanilla
1 cup of heavy cream (optional)

Preheat oven to 360F. Mix all ingredients. In greased baking pan sprinkle some brown sugar and place slices of blanched pineapple, on top of that pour the mixture. Bake around 30 min, or until you see golden brown color! Place it on cooling rack for 15 min. Place the plate on  pan and revert upside down the pan, now slices of pineapple are on the top! If you want you can decorate the top with whipped heavy cream! 

It was delicious! You have to try it!

Skinny butter nut cookies!

These are super easy and fast! And there are multiple variations of this recipe πŸ˜‰ I made them this morning, they are great to nibble them when you are craving for something sweet. But no guilt here πŸ˜™πŸ’™ 

I will share recipe for dozen (12 cookies), they are small like three, four bites. You can double the recipe if you want it! Here we go:



Ingredients:


  • 1 banana or egg (I used banana)
  • 2 tbsp of nut butter ( I used almond butter)
  • 1/2 cup of almond flour, or coconut flour, or oats flour
  • 1 tbsp of honey
  • If you want you can use a cocoa, half of cocoa, half of flour








Preheat oven to 380 F. Mix all ingredients together. With a teaspoon divide mixture in twelve little balls. Squash them with a fork, bake them around 15 min. Let them cool before serving them πŸ’ŸπŸ’ŸπŸ’ŸπŸ˜ŠπŸ˜ŠπŸ˜Š

Oats cookies without fat πŸͺπŸͺπŸͺ

I m trying to be fit this summer... Well there is 2 month left until vacation...πŸ‘€πŸ™ˆ And after pregnancy I loveeee to eat sweet treats πŸ˜‹ That why I m trying my best to make some healthy treats. So here is one recipe for cookies, they are really good for breakfast. They have 88 calorie per piece.  And they are made without fat and white flour.




Ingredients for 10 of them:


  • 1 egg
  • 2 smaller bananas or 1 big one
  • 1 tsp of vanilla
  • 2 tbsp of honey - or you can do it without
  • 2 tsp of baking powder + 1/4 tsp of baking soda
  • 1/2 cup of oats flour ( I grind my rolled oats into flour)
  • 1 cup of rolled oats
  • 1 tbsp of cocoa, optional
  • I used 1/2 cup of chocolate chips and some diced strawberries (but strawberry give them little bit of moisture, not bad, but next time I will try something else), you can use what ever you like nuts, raisins, coconut, you make your own mix.
Preheat oven to a 340 F. Place baking paper on the pan.
As always mix first wet ingredients, start by mixing banana with egg, vanilla, honey, mix nicely then add dry items. With ice scoop apportion mixture into little balls placing them on the pan. After dividing them, use the tea spoon to flat the cookies into thickness around 1/2 inch.
Bake them about 12-15 min if you want them to be chewy, or couple minutes more if you prefer not to be chewy. 

Place them on cooling rack to rest 20 min. 
And they are ready to eat! 

Not so dense and rich, but nice to nibble something healthier with coffee or tea in the lovely summer mornings! πŸ’—πŸͺ☕☕πŸͺ

Energy bars πŸ’ͺπŸ’ͺπŸ’ͺ

I love healthy snacks that you can bring with you where ever you go, to work, to picnic, while traveling, going to a park. These bars are very good for your kids too, like a snack in the middle of day. They are like false chocolate 😊 


And very easy to made. I pack two of these to my husband for work, every morning. He really likes it. Here is the ingredients:


  • 1 1/2 cup of dates
  • 1 1/2 cup of nuts (what ever you like)
  • 1/4 cup of pure cocoa
  • 1/4 cup of nut butter ( peanut or almond)
  • If you want you may add some honey, depends how sweet you like it to be!
  • some cocoa or coconut, or more nuts for the coat
First grind the dates . Add the nuts in the  grinder with already chopped dates, add cocoa, and nut butter. Mix it until the is a nice consistency of mixture. Put the baking paper on the counter top, put the mixture, and on the top another baking paper. With a rolling pin, roll the mixture until there tick about a 1/4 of inch. Cut the mixture into a bar. Coat them with cocoa (like me)or coconut (I would do this but my husband is allergic to coconut - I love it πŸ˜”) or coat it with more chopped nuts! 

I keep them in the fridge πŸ’™πŸ’™πŸ’™πŸ’™πŸ’™

FLOURLESS CHOCOLATE CAKE! 😍

Well, summer time is near...so we have to get in shape! πŸ˜‡ That why I find and make this delicious chocolate wonder! We adore it! Such a rich and moist texture! You have to try it! Here is a recipe, very easy.



Ingredients:


  • 1 cup of almond flour
  • 1/4 cup of cocoa
  • 1/4 cup of honey
  • 1/2 cup of melted chocolate + some for top (optional)
  • 1/2 cup of milk
  • 4 eggs
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
Preheat oven on 350 F. Mix first wet ingredients, then mix in dry one. Grease the pan, I use the pan for cheesecake! Pour the batter and bake it about 25/30 min! Use a toothpick to see is it done! 
 Leave it to cool it of, melt the chocolate with a little bit of oil, pour on the top. Its optional, or you can only put some icing sugar instead of a chocolate.
And the fruits are optional, I put them  because looks very nice πŸ’œ

And there is only left to enjoy in this perfection... πŸ’ŸπŸ’ŸπŸ’ŸπŸ’ŸπŸ’ŸπŸ’Ÿ

Something savory

I love these savory muffins! The are easy, quick and very nice for breakfast to go or if someone is suddenly coming to visit you  πŸ’
And you can put inside whatever you want or have in the fridge, some leftovers etc.

Ingredients for 12 muffins:

  • 2 1/2 cup of flour
  • 1/2 cup of oil
  • 2 eggs
  • 1 cup of sour cream
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • bacon (ham, sausage...), cheese, peppers, olives, etc you can put how much you want to. Chopped in cubes.
Mix all ingredients, and the cubes add last one. Here is the picture how it looks before baking ↓





 On the top you can put some flax seeds, poppy seeds or sesame seeds. Preheat oven on 420 F, bake around 25 min until golden brown!

Sweet potato-oats muffins πŸ‘ŒπŸ‘ŒπŸ‘Œ

I decided to make this recipe because I had sweet potato pure leftovers. And I made great decision! πŸ‘ŠπŸ˜‰
 They are healthy and great for breakfast, or if you wanna indulge without sin in something sweetπŸ˜‹ 

Ingredients for a dozen:
  • 2 1/2 cups of oats
  • 1/2 cup of honey or sweetner of choice
  • 1 cup of sweet potato pure
  • 1 tsp of baking powder + 1/2 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 cup of milk
  • 1 egg
  • 6 tbsp of smooth nut butter, I used peanut butter
Preheat oven to a 410 F. I always use ice cream scoop for pouring batter in the baking cups, one per a baking cup. If you want you can put something on the top of the muffins like I did, it's your choice πŸ˜‰ Bake them for about 30 min. Leave them to cool before serving them! They are moist inside and with a nice crust outside. In every case very delicious and healthy recipe! Enjoy πŸ˜πŸ’πŸ˜™πŸ˜˜

Another kind of donuts for Mother's day 😊 🍩🍩🍩

First of all, HAPPY MOTHER'S DAY to all of mom out there! πŸ’—πŸ’—πŸ’—

I m hoping that you were with your family and friends yesterday and that you had fun 😍! I was with my little bunny Mike and my family, we spend a pleasant Sunday, of course we did make something sweet 😊 For Mother's day there was donuts 🍩🍩🍩 on the menu, but some different kind then you use to eat. This is a recipe from my mother and this is a very usual stuff to eat in the morning for breakfast in Eastern Europe.


Ingredients:
  • 2 cup of warm milk
  • 2 1/2 tsp of dry yeast
  • 1 tsp of sugar
  • 1 tsp of salt
  • 3 eggs scrambled
  • 1.7 oz oil
  • 4 1/2 cups of flour
  • +   oil for frying
Mix the liquid ingredients, then add the dry one, but slowly. In first you will mix it with a wooden spoon, as you adding the flour you will need to kneed the dough with your hands. Kneed well until there is smooth  texture, leave it in the bowl that is covered with clear wrap to rise. 
When the dough is doubled kneed it again and roll it until the dough is 1/2 inch tick. Cut the dough with glass into a round shape. Leave it to rest and rise, about 20 min.
In the deep pan, prepare oil for frying the donuts. The pan don't need to be large, it enough to fry three donuts at once, because they are done very fast and you don't need to much oil if you fry it in the smaller pan. Pour a 2 1/2 inch of oil into a pan. When you see that the donuts are well rise you can put the pan with oil to heat it up.
The oil have to be enough hot to start frying. You can try a little bit of dough ( there will be some cuts of from round shape, like little triangles, and I love it to fry them like that, there are delicious) The oil is ready when you put the dough and there is a bubbles all around the immersed dough.
Put the donuts into the hot oil, fry it until there is a golden brown color, and then flip it on the other side. The donuts will rise again in the hot oil. They will be like fluffy balls 😊

You can fill it with nutella and cinnamon sugar like me, or  with what ever you want to πŸ˜‰

Bread!! 🍞

I have to admit... I m a bread lover!!!! πŸ’˜πŸ’˜πŸ’˜ I love bread so much! Bread is my secretly love. Yep, I m guilty. But I think there is no single person that don't  like bread, that would be weird, by my opinion as a bread lover 😍😍😍 

Because of that I will share my recipe with my readers. There is no regret with this one! Homemade, crunchy, and heavenly bread. You can make it with every flour that you want, today I made it with regular white flour. 
Here is recipe:


  • 4 cups of flour
  • 2 cups of warm water
  • 2 tsp of dry yeast
  • 1 tsp of honey
  • 1 tsp of salt or more if you desire it
  • some corn flour, medium grind 
  • some oil

Put the 4 cups of flour in the bowl, sprinkle yeast over it.  Add honey and salt, pour water slowly and mix it with a wooden spoon, after a while you will need it to kneed with your hand. When there is a compact dough add a little bit of oil around it, and leave to rise. Put around the bowl  a clear wrap, to make a nice atmosphere for dough to rise. You can do some other things while you wait ( I usual take care of my boy, like playing with him and having some fun, while there is magic happen  inside the bowl 😊) 
You can prepare a baking pan for the bread. I love the rounded shape, so I bake it in the pan for cheesecake with adjustable sides. Sprinkle the pan with corn flour, cover the whole bottom.

When the dough is doubled, kneaded it and put in the baking pan. Leave it to rise again. Sprinkle the corn flour all over the  dough. When you see that the dough is nearly doubled you can put in the cold oven and turn it on a 440F. Bake it around 1 hour, the crust have to be golden brown, even a dark brown.
When is done place it on the cooling rack for 30 min. And you can enjoy it πŸ˜™πŸ˜™πŸ˜™πŸ˜™πŸ˜™
Store it in the paper bag, it would be nice for couple of days, of course if you don't eat the all of it the day you make it πŸ˜†

Banana coffee cake πŸ’—

Sunday, fun day πŸ˜„ I love to sit on my terrace and drink coffee, in the morning when outside is a little bit chilly with my favorite whittle around me, or in the evening when there is some magic in the air. Of course, with coffee have to be something to bite on πŸ™‚ Today I choose to make this banana cake, its perfect  with double espresso, or as my husband like, with cup of milk. This cake you can make it like this, or like a big cake with cream between sponges! πŸŽ‚
If you love bananas this recipe is for you:

  • 3 bananas, crushed with a fork
  • 3 eggs
  • 2 tbsp of honey
  • 1/4 cup of oil
  • 2 cups of flour (almond flour, or you can make it with regular one) 
  • 1 tsp of baking soda
  • 1 tsp of vanilla 
  • 1 tsp of lemon juice
Mix the bananas + eggs + honey + oil + lemon juice + vanilla, after that slowly  add  flour + baking soda. Mixture have to be smooth, poor it in the greased baking pan. Bake the cake on 350 F about 30/35 min ⏰


When the cake is done, if you desire you can coat  it with chocolate as me, because my hubby love chocolate πŸ’™

MaΔ‘arica/Hungarian girl cake!!!!

One of my most favorite cake from my homeland is MaΔ‘arica, or if  I translate on English, it would be called ~ Hungarian girl cake 😁 I love this cake! It's like a rainbow in my mouth.
From this recipe you will get a lot, so if you want it, you can make with half of ingredients.
For sponge you will need:
  • 600 gr (1.3 lb) of flour
  • 200 gr (0.44lb) of butter
  • 200 gr of sugar
  • 200 gr of sour cream
  • 1 tsp of baking powder
  • 2 eggs
For cream:
  • 1,2 l ( 40.6 fl oz) of milk
  • 130 gr (0.3 lb) of flour
  • 20 gr (0.04 lb) of cocoa
  • 200 gr of sugar
  • 200 gr of butter
  • 150 gr of chocolate
Beat the eggs, sugar and butter together, add a sour cream and slowly mix it, add a flour with baking powder. The dough have to be smooth, left it to rest about 15 min wrapped  in  clear wrap. There will be about 1.300 gr of dough (2.87 lb), cut it on the 6 equal pieces ( 215 gr/ 0.47 lb).
Roll every piece very thin in the rectangle, you will have 6 sponges. Bake them on the upside down baked pan on 340 F for 13-15 min. The sponge have to be pale, do not overdo them!



Cream: 
Put the 1l (33.8 fl oz)of milk to boil. Mix the flour, sugar and cocoa with rest of milk (2dl), pour that mixture in the boiled milk. You have to stir it, because if you not, there will be lumps in the cream. The cream is done when you taste it  and there is no taste of flour. Put the butter and chocolate in, stir it until there is a smooth texture. Left the cream for 15 min to rest.

Cream have to be warm when you start to layer the cake. On every sponge put 5 dipper for soup of cream. On the 6th sponge goes a chocolate glaze ( 100gr of chocolate + 50 gr butter + 2 tbsp of oil. Melt the chocolate add butter and oil, stir it until smooth. Pour it on the top of the cake! 



Left the cake overnight to rest, it will be heavenly soft in the morning! πŸ’œ

The phenomenal CHEESECAKE!

I promise a recipe for my Easter desserts and I will begin with this extraordinary cheesecake ( have to say, this is my beloved one πŸ’—) I tried this light cheesecake in Italy years ago, my sister made it. Hot summer, refreshing cake and fruits on the top, mmmmmmmmmmm. This looks very nice when its done, and  very simple cake to make it. 

Ingredients:

For bottom:
  • 250gr of Digestive biscuit
  • 120gr of butter
For cream:
  • 500gr sour cream
  • 250gr of heavy cream
  • 4 egg yolk + 4tbsp of sugar
  • 12gr of gelatin
  • 1/2 of a lemon

* The best gelatin for this cheesecake is fish gelatin - in thin sheets. Like in the picture below ↓



Sheets of gelatin (2 sheets) submerge in cold water. Grind the Digestive biscuit and mix it whit melted butter, put the mixture in the cheesecake pan and press it down to make a solid bottom for cake.
Beat the heavy cream and put in the fridge. Beat the yolks with sugar and add a lemon zest and lemon juice. Put sour cream in and mix it a little bit. Pull out gelatin from water and put in the microwave for few seconds to melt it down. Pour the melted gelatin in the mixture of yolks and sour cream. Mix it with hand, add a beaten heavy cream in and stir it slowly until there is nice texture. Pour the cream in the pan, on the bottom you made it earlier. On the top you can laid any kind of fruits you like it! Leave in the fridge for 5 hours before serving.

Avocado truffles 😍

Spring is finally here! Yayyy for that.... The sun, birds, awakened nature and long walks..blossom all around us. Last weekend we decided to go visit our relatives in Mahopac, NY. Small town near New York city, with wonderful landscapes full of lakes. Here is some pictures before we start recipe for this tasty and healthy truffels! 



And here is a story about these truffels :) My husband "dont like" dates, he told me few days ago when I boughted them. I said ok, no problem they are for me, I loved them ;) But... I have these lovelys on my mind. And because my hubby always seek something sweet after dinner, I made them. Of course he eated almost all of them! :) And said to me with full mouth: They are deliciuos! And I will share this recepie with you:

  • 1 medium size avocado
  • 10 pited dates
  • 115 gr of semi sweet chocolate
  • 3 tbsp of cocoa
  • 3 tbsp of chopped hazelnuts or nuts,etc
Slip in the blender avocado, dates, cocoa, and nuts. Before you put chocolate in, you have to melt her. Blend the ingredients until there is a nice mixture. And make small balls,bite sized. Cover them with  cocoa or nuts, coconut... They have to be in fridge for one hour before serving them.



I promise they are delicious and healtier then original one 😘 

Keep them in the fridge!

Nut marmalade Roll Cake

 This roll cake is very easy to make and it's wonderful! You can make the cake without nuts if you are allergic or don't love nuts....
