Sweet potato-oats muffins πŸ‘ŒπŸ‘ŒπŸ‘Œ

I decided to make this recipe because I had sweet potato pure leftovers. And I made great decision! πŸ‘ŠπŸ˜‰
 They are healthy and great for breakfast, or if you wanna indulge without sin in something sweetπŸ˜‹ 

Ingredients for a dozen:
  • 2 1/2 cups of oats
  • 1/2 cup of honey or sweetner of choice
  • 1 cup of sweet potato pure
  • 1 tsp of baking powder + 1/2 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 cup of milk
  • 1 egg
  • 6 tbsp of smooth nut butter, I used peanut butter
Preheat oven to a 410 F. I always use ice cream scoop for pouring batter in the baking cups, one per a baking cup. If you want you can put something on the top of the muffins like I did, it's your choice πŸ˜‰ Bake them for about 30 min. Leave them to cool before serving them! They are moist inside and with a nice crust outside. In every case very delicious and healthy recipe! Enjoy πŸ˜πŸ’πŸ˜™πŸ˜˜

    In Italy we do not use much peanut butter . You think they will be good also with classic butter?

  2. It will be ok if you use regular butter! You can try it and, please let us know how the muffins were! But, they taste better with some nut butter, peanut or almond butter... πŸ™‚
