My sister bring us beautiful cake from Italy, the cake that they traditionaly make and eat for Easter. Colomba is the name of it, and translation is Dove, because the shape of  cake is like a dove with spreaded wings. Of course we didnt save it for Easter, we eat it one afternoon with a cup of coffee. Maybe I will try to make it on my own for Easter :)

Carrot cake!

My sister loves a carrot cake! Because she is coming to visit us, I prepared one for her. This recepie is for very soft and moist sponge with my favorite vanila cream. So let's begin!
For a sponge you need:
  • 2 1/2 cup of flour
  • 1 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 2 cup of sugar ( I used brown sugar)
  • 4 eggs
  • 1 1/2 cup of oil (I used canola oil)
  • 2 cup of carrot  (I blend my carot, you can grated it, if you want)
  • grated orange peel - depends of taste how much you will put in.
For cream you need:
  • 450gr of cream cheese
  • 6 tbsp of butter
  • 1 tsp of vanila extract
  • 1 cup of icing sugar
  • 4 tbsp of sour cream
All dry ingredients mix together, in the another bowl mix eggs + sugar +oil with mixer. Put in carrot and stir with spoon, after that put in dry ingredients and stir well. Prepare two baking pans for baking and  share mixture evenly in two parts. Bake on 360F for 30-35 minutes.

After your sponges are cooled, you can make cream by mixing all ingredients together. Put the cream between sponges, and all around the cake. If you want, you can leave a little bit of cream to decorate cake, like me. Because I dont love artificial colors, I put cinnamon in the decorating cream to make a color and a taste. Enjoy ;)
    My carrot cake!
I have to mention my lovely carrot muffins that are delicious, and they are a variation of this lovely cake!

New beginnings

I came here, in this city in August 2016. Last year was a  year of changes for me. The year that I discover that I m pregnant with my first baby. And the moving year for me. Moving to NYC, to another country, another continent. My country is small country in Europe, called Serbia. My husband have roots there, and we find each other even if he is a child of New York and I m a Serbian girl. Today I m a proud mother of a baby boy, my cupcake Michael.

My life endured grand scale of changes,  but I always bring with me my passion for food and creativity. People who enjoy eating food, love to create, bake, smell the scents of their creations. Like me. My childhood and my college days were labeld by my parents restaurant. So, I grow up surrounded by fresh vegetables, scents of delicious meals, big partys and of course lovely desserts.

In my early age I had a dream. To have  my own sweet "bakery" shop. And the dream is still here. And I m on the way to do it! This is a small step toward my big dream πŸ’œπŸ’œπŸ’œ! My homemade baked goods is beginning of something wonderful.
Till the next post, XoXo πŸ’‹
