MaΔ‘arica/Hungarian girl cake!!!!

One of my most favorite cake from my homeland is MaΔ‘arica, or if  I translate on English, it would be called ~ Hungarian girl cake 😁 I love this cake! It's like a rainbow in my mouth.
From this recipe you will get a lot, so if you want it, you can make with half of ingredients.
For sponge you will need:
  • 600 gr (1.3 lb) of flour
  • 200 gr (0.44lb) of butter
  • 200 gr of sugar
  • 200 gr of sour cream
  • 1 tsp of baking powder
  • 2 eggs
For cream:
  • 1,2 l ( 40.6 fl oz) of milk
  • 130 gr (0.3 lb) of flour
  • 20 gr (0.04 lb) of cocoa
  • 200 gr of sugar
  • 200 gr of butter
  • 150 gr of chocolate
Beat the eggs, sugar and butter together, add a sour cream and slowly mix it, add a flour with baking powder. The dough have to be smooth, left it to rest about 15 min wrapped  in  clear wrap. There will be about 1.300 gr of dough (2.87 lb), cut it on the 6 equal pieces ( 215 gr/ 0.47 lb).
Roll every piece very thin in the rectangle, you will have 6 sponges. Bake them on the upside down baked pan on 340 F for 13-15 min. The sponge have to be pale, do not overdo them!



Cream: 
Put the 1l (33.8 fl oz)of milk to boil. Mix the flour, sugar and cocoa with rest of milk (2dl), pour that mixture in the boiled milk. You have to stir it, because if you not, there will be lumps in the cream. The cream is done when you taste it  and there is no taste of flour. Put the butter and chocolate in, stir it until there is a smooth texture. Left the cream for 15 min to rest.

Cream have to be warm when you start to layer the cake. On every sponge put 5 dipper for soup of cream. On the 6th sponge goes a chocolate glaze ( 100gr of chocolate + 50 gr butter + 2 tbsp of oil. Melt the chocolate add butter and oil, stir it until smooth. Pour it on the top of the cake! 



Left the cake overnight to rest, it will be heavenly soft in the morning! πŸ’œ

I promise a recipe for my Easter desserts and I will begin with this extraordinary cheesecake ( have to say, this is my beloved one πŸ’—) I tried this light cheesecake in Italy years ago, my sister made it. Hot summer, refreshing cake and fruits on the top, mmmmmmmmmmm. This looks very nice when its done, and  very simple cake to make it. 

Ingredients:

For bottom:
  • 250gr of Digestive biscuit
  • 120gr of butter
For cream:
  • 500gr sour cream
  • 250gr of heavy cream
  • 4 egg yolk + 4tbsp of sugar
  • 12gr of gelatin
  • 1/2 of a lemon

* The best gelatin for this cheesecake is fish gelatin - in thin sheets. Like in the picture below ↓



Sheets of gelatin (2 sheets) submerge in cold water. Grind the Digestive biscuit and mix it whit melted butter, put the mixture in the cheesecake pan and press it down to make a solid bottom for cake.
Beat the heavy cream and put in the fridge. Beat the yolks with sugar and add a lemon zest and lemon juice. Put sour cream in and mix it a little bit. Pull out gelatin from water and put in the microwave for few seconds to melt it down. Pour the melted gelatin in the mixture of yolks and sour cream. Mix it with hand, add a beaten heavy cream in and stir it slowly until there is nice texture. Pour the cream in the pan, on the bottom you made it earlier. On the top you can laid any kind of fruits you like it! Leave in the fridge for 5 hours before serving.

Avocado truffles 😍

Spring is finally here! Yayyy for that.... The sun, birds, awakened nature and long walks..blossom all around us. Last weekend we decided to go visit our relatives in Mahopac, NY. Small town near New York city, with wonderful landscapes full of lakes. Here is some pictures before we start recipe for this tasty and healthy truffels! 



And here is a story about these truffels :) My husband "dont like" dates, he told me few days ago when I boughted them. I said ok, no problem they are for me, I loved them ;) But... I have these lovelys on my mind. And because my hubby always seek something sweet after dinner, I made them. Of course he eated almost all of them! :) And said to me with full mouth: They are deliciuos! And I will share this recepie with you:

  • 1 medium size avocado
  • 10 pited dates
  • 115 gr of semi sweet chocolate
  • 3 tbsp of cocoa
  • 3 tbsp of chopped hazelnuts or nuts,etc
Slip in the blender avocado, dates, cocoa, and nuts. Before you put chocolate in, you have to melt her. Blend the ingredients until there is a nice mixture. And make small balls,bite sized. Cover them with  cocoa or nuts, coconut... They have to be in fridge for one hour before serving them.



I promise they are delicious and healtier then original one 😘

My favorite 5 min cake 😍


Time is money they say... Well maybe that is true, time goes and never go back. That is why people respect time and kneel beneath him. No more serious talk, we need something sweets :) Sometimes a quick dessert is life saver, because you have unannounced guests, or your folks crave for a treat and they want it fast :) In that situations you can try this interesanting 5 minutes cake!  This recipe arise one day because I was in that situation... I needed something sweet ASP! :)


Probably you have all of ingredients for this cake at your fridge and pantry right now, here is the list:
  • 1 egg
  • 3 tbsp of sugar (I use brown sugar)
  • 3 tbsp of greek yogurt or sour cream 
  • 3 tbsp of vegetable oil (I always use canola oil)
  • 3 tbsp of flour
  • 1 tbsp of cocoa
  • 1 tsp of baking powder 
For topping you need:
  • 2 tbsp of sour cream
  • 1 tbsp of icing sugar
  • and some fruits like blueberry, raspberry, strawberry etc.

First you beat egg with sugar until smooth, add yogurt or sour cream + oil + flour with baking powder and cocoa, mix it until is well combined. Put the mixture in the cups, 5 tbsp of mixture per cup, before that spread cups with oil. You can see the high of my cake in the picture above 🠝. From this amount of ingredients you will have 2 larger cakes. Now put cups with mixture into a microwave and hit it on 2.5 min (My microwave have output power 1000W). Minutes depends of microwave power, so you can calculate it based on power of your microwave. Example if your microwave have 700W output power you will hit it on about 3,5min!

Meanwhile, for topping  beat sour cream and sugar, or if you have ice cream 🍨, you can use it instead of this topping! 

When they are done, put the cups upside down on the plate and the cake will fall out. Spread warm cake with topping or ice cream, then add fruits above topping and some icing sugar on the top for a nicer look! 

And voila!

They are ready to go! Fluffy vanila sponge and creamy frosting sprinkled with pistachios to give a little kick! Lovely beige color with a touch of green, they are wonderful outside, but inside is heaven!
